Simon was born in Dayton, Ohio, the first American-born baby in a group of 100 Jewish refugees from the U.S.S.R. He spent his youth in Michigan, eventually studying Microbiology at the University of Michigan. Simon worked in the food safety industry for 4 years, developing tests to detect contamination in milk and grain, before pursuing a Master’s degree in Sustainable Aquaculture. He has managed one of the largest recirculating aquaculture facilities in North America, and is passionate about the future of sustainable food production. Simon enjoys playing hockey and camping, and he hopes to see Detroit’s resurgence centered around green technology.
